Xanthan gum is obtained from cornstarch, fermented by Xanthomonas bacterium, extracted, dried and crushed into finished products. With good rheological properties and shear resistance, it is a hydrophilic biopolymer substance with thickening and stabilizing effects.
Application:
application is as a stabilizer in various proteinbeverages and milk beverages to prevent oil-water separation, improve protein stability, andprevent protein precipitation. Xanthan gum canalso be used in the processing of meat products,canned food, frozen food, jelly production, etc.
PRODUCT EFFECTS
XG is white to cream in color, free-flowing powder, which gets easily solubilized in hot and cold water due to its ordered conformation. Moreover, XG remains stable in both acidic as well as in alkaline conditions due to its rigid structure and resistance to any pH change.
